Italian cuisine and a lot of Asian cuisines value a certain amount of bitter flavor- it takes a certain knack to temper and balance the bitterness. A lot of alkaloids are bitter but are valued as stimulants. Also, consider chiles- capsaicin evolved to repel mammals, the peppers typically being eaten by birds that could spread the seeds more efficiently.
